The roots: a journey that began in 1947

The history of Sweet Coffee Italia has its roots in a distant era, when in 1947 , after the war, Domenico Di Santo decided to emigrate to Brazil in search of new opportunities .

 

It was there, immersed in the coffee plantations and markets, that the Di Santo family 's bond with this extraordinary raw material was born.

Domenico began roasting coffee using traditional methods, with pans and rudimentary tools, carrying this passion with him even after returning to Italy.

Growing up surrounded by the aroma of home-roasted coffee, Mario Di Santo, Domenico’s son, developed a natural curiosity for the world of roasting. That interest became a true calling in 1998, when Mario purchased his first roasting facility and began roasting professionally with gas-powered machines.

However, the inability to roast coffee directly in front of his customers—due to fire safety regulations—pushed him to seek an innovative alternative.

Determined to overcome this limitation, Mario decided to embark on a path of research and development, with the aim of revolutionizing the coffee roasting industry.

 

This led to the idea of an electric roasting technology based on the ohmic principle, a cutting-edge system capable of guaranteeing safety, efficiency, and uncompromising quality.

The beginning of the revolution: the go-electric transition

The answer to that question was electricity.

Mario immediately realized that electric roasters could eliminate the problems associated with gas use: complex permits, harmful emissions, and reduced safety.

He thus began designing small electric machines with thermoelectric resistors, paving the way for more accessible and sustainable coffee roasting.

 

In the years that followed, his initial intuition consolidated into a real mission: to make coffee roasting more innovative and accessible to everyone, overcoming the limitations of existing technologies.

The encounter that changed everything: Electromagnetic Induction

The turning point came with a crucial meeting: Gregorio Milella, an expert in electromagnetic induction industrial heating systems. The collaboration between Mario and Gregorio immediately proved synergistic: on the one hand, the first-hand experience of a roaster who knew every nuance of coffee; on the other, the engineering expertise of a specialist in the field of induction heating.

 

The goal was ambitious: to develop the first electromagnetic induction roaster in history. However, the research and development process proved extremely complex. Without any pre-existing references, the project took shape from scratch, facing significant technical obstacles.

 

Several times, faced with seemingly insurmountable difficulties, Gregorio left the lab aware of the challenge, only to return the next day with new solutions, the fruit of relentless study and experimentation.

Mario, with his vision and determination, constantly encouraged perseverance, keeping the ultimate goal firmly in mind.

After years of research and refinement, Sweet Coffee Italia achieved a revolutionary milestone: introducing large-scale coffee roasting without the use of gas, using only electromagnetic induction technology.

 

This achievement not only marked an unprecedented innovation in the industry, but also set a new standard in terms of sustainability, efficiency, and quality control in the roasting process.
